Homemade Mac 'N' Cheese

What you'll need:

1 medium sweet onion, finely chopped
2tbsp butter1tbsp flour
½ gallon whole milk
3lbs cheese, shredded (your choice, I always use at least one pound cheddar and 8oz swiss) for sauce
8oz cheese, shredded mozzarella or provolone to top with
2lbs any type of pasta
Salt and pepper to taste

What you'll do:

Sautee onion in butter with a pinch of salt until caramelized (about 20min) in a large sauce pan or pot. Add flour and stir cooking for about 2 min until flour absorbs all excess butter and turns brown. Deglaze bottom of pot with a little milk, then add about 2/3 of remaining milk and cook on med low heat until simmering. Add cheese to milk mix a few handfuls at a time, waiting until fully incorporated to add more until all cheese has been added. Season to taste with salt and pepper. In large baking pan add cooked pasta (cook pasta for two min less than it says to cook on box) and cheese sauce. Top with rest of cheese and bake in a pre heated oven at 350 degrees for about 45min.

*Fat Kid Note - Don't be afraid to try different seasonings on this. This applies to any mac 'n' cheese, especially crappy out-of-the-box mac. Add some garlic powder and frozen veggies, or get crazy and throw in some cayenne pepper or chili seasoning. Life is too short to always eat the same flavor mac.
